The Milaidhoo Coconut Cake (Gabulhi Boakibaa) is so delicious that once you’ve tried it at Milaidhoo, you’ll want to make it at home to remind you of the best food of the Maldives. This simple recipe will make a fluffy and juicy Gabulhi Boakibaa that lets you continue your story of our small island while away from Milaidhoo.

Ingredients:

450 g                    Grated sweet young coconut

430 g                    Sugar

280 g                    Plain flour

50 g                       Rose water

50 g                       Coconut milk powder

2tsp                       Baking powder

3                            Eggs

Oil for greasing the pan (use a neutral oil)

How you make it:

  1. Blend all the ingredients (except the oil) in a blender or food processer until finely ground and well mixed.
  2. Oil a baking tray and pour the cake mixture into the tray.
  3. Bake it in an oven for 45 minutes under 170°C
  4. Cool the cake before cutting into bite-sized pieces
